Mustard is a condiment made from the seeds of a mustard plant. The whole, ground, cracked, or bruised mustard seeds are mixed with water, vinegar, lemon juice, wine, or other liquids, salt, and often other flavourings and spices, to create a paste or sauce ranging in colour from bright yellow to dark brown. Prepared mustard is made using three main types of mustard seeds sinapis alba (white or yellow), Brassicar juncea (brown), and Brassica nigra (black). They vary in potency, ranging from mild to spicy and robust. In general, the darker the seed, the more pungent the flavour. The mustard is yellow. Mustard seeds themselves are quite brown. English speakers have been calling this colour “mustard” since the 1840s, and this whole time, we've been giving credit to the wrong spice. Mustard yellow was always turmeric yellow. Mustard oil can mean either the pressed oil used for cooking or a pungent essential oil also known as the volatile oil of mustard. The essential oil results from grinding mustard seed, mixing the grounds with water, and extracting the resulting volatile oil by distillation. Mustard oil comes from the seeds of mustard plants. It is rich in monounsaturated fatty acids, which appear to reduce the likelihood of developing cardiovascular disease. However, cooking with the oil may pose a serious risk, especially for children.
Mustard seeds are grown only in rabi season and the sowing starts in October, while harvesting begins in March. Mustard is an important cash crop for farmers.
